Taste of Andalusia: traditional dishes that bring the atmosphere into your home
Andalusia has something magical. The light, the landscape, the scents and, above all, the food make you feel at home the moment you arrive. In this region, Spanish and Moorish culinary traditions blend beautifully. Guests at Casita Comares immediately notice how central food is to daily life here - the rhythm of the day practically revolves around it. But the best part is: you don’t have to wait until you’re in Comares to experience that feeling. You can already start tasting and enjoying it at home.
The pure flavours of the south
Some dishes seem made for the Andalusian climate. Think of gazpacho, the cold tomato soup that appears on menus everywhere in summer. A few ripe tomatoes, cucumber, pepper, garlic and good olive oil - that’s all you need. One bowl and you can almost picture yourself on a terrace in Málaga or in the shade of the village square in Comares.
Equally beloved is tortilla de patatas, the classic Spanish potato omelette you can order in any village, at any time of day. With or without onion, warm or at room temperature - always simple, honest and delicious.
From mountains to sea
The landscape around Comares changes constantly - and the cuisine changes with it. Drive toward the coast and you’ll soon smell wood fires. In small chiringuitos, espetos are roasted: sardines skewered on a stick and slowly cooked over the embers. You eat them with your hands, just like the locals, while the sound of the sea hums in the background. It’s a taste and an experience you won’t forget.
Flavours from inland
Further inland you’ll find salmorejo, the creamy, velvety cousin of gazpacho, originally from Córdoba but loved throughout Andalusia. Thick, smooth and full of flavour, always served with finely chopped serrano ham and egg. A dish that shows how simple yet refined Spanish cuisine can be.
And although paella isn’t originally Andalusian, it is undeniably part of Spanish life. In the villages around Comares, you’ll often find a huge paella pan on the village square - long tables, music, children running around… It’s as much about being together as it is about the dish itself. Can’t wait? Then salmorejo is the perfect dish to make at home - simple, healthy and surprisingly delicious. Here’s how to make it:
Blend 1 kilo of ripe tomatoes with pieces of stale white bread, a clove of garlic and a pinch of salt. Slowly add extra virgin olive oil until the mixture becomes thick and creamy. Chill it and serve with serrano ham and boiled egg. With just one bowl, you’ll already have a taste of the Spanish summer at home.
